How to Cook Chicken Soup for the Soul

My mom’s chicken soup recipe is sure to give your spirits a lift during the shorter days of fall and winter. I love it any time of year!

Ingredients

1 package chicken legs

1 carton (32 oz) chicken broth

1/2 carton (16 oz) bone broth

1 onion cut in fours, keep together

1 parsnip, cut up

1 package petite carrots

8 stalks celery, cut up

1 bushel dill

2 packages garlic

1/4 cup parsley

2 cups water

1 bay leaf

1 bag egg noodles

Directions

  1. Chop carrots, celery, and garlic

  2. Wash chicken legs

  3. Place chicken legs in large soup pot

  4. Boil broth in microwave

  5. Boil 2 cups water in microwave

  6. Pour broth and water into soup pot

  7. Add carrots, celery, and garlic to pot and stir

  8. Add dill to top of pot

  9. Add parsley

  10. Cook 2 hours on medium heat

  11. Stir soup every half hour

  12. Add bay leaf in last 15 minutes

  13. Cook egg noodles in separate pot 4-6 minutes

  14. Add to soup as desired
